Coffee Geek & Friends’ vegan Banana Bread

Banana Bread

Ingredients

330g (roughly x3) Banana      

Orange zest (½ orange)

Lemon zest (½ lemon)

25g walnuts

12g pecans

125g sugar

70g oil

60g coconut milk

220g flour

2 ½ tsp baking powder  

Equipment

Two small bowls

One large bowl

Banana Bread tin, lined with baking paper

Method

1.     Heat oven at 170C

2.     In the large bowl, whisk together the sugar, oil and coconut milk and set aside

3.     In a small bowl, mash together the peeled bananas and citrus zest  

4.     In the second small bowl, mix together the flour and baking powder

5.     Mix the pecans and walnuts on a baking tray and roast for 7 minutes

6.     Add the banana mixture to sugar mixture and whisk together

7.     Gradually fold flour into the mixture until there are no lumps

8.     Add 2/3 of the baked nuts and mix

9.     Pour batter into the prepared tin and sprinkle on the remaining nuts

10. Bake in the oven for 55 minutes, until a skewer comes out clean
