What is the concept of Greenwood?

Greenwood is a great place for all-day dining and drinking, from breakfast, lunch, pre/post theatre dining to weekend brunches and late-night sports in our premium Sports Lounge. It’s your one-stop-shop just opposite Victoria station.

What’s the signature dish?

I think it would have to be our crispy buttermilk chicken burger. It sounds simple but we have made it a winning dish by adding grilled chilli cheddar, charred corn puree and pickled guindilla peppers.

What do you like about being in Nova?

I like the variety of outlets here and the fact that all of the restaurants and bars are places I would like to visit – Nova provides so much more than a generic high street offering.

When did you know that you wanted to be a chef?

While I was at school studying, I found that I enjoyed being in the kitchen more so than in the classroom, it was at this point that I knew I wanted to be a chef.

What’s the most important thing you’ve learned in your career?

I think it is to try and think from the customer’s perspective and to always strive to make them happy, after all we are in the hospitality industry and it pays to be hospitable.

Whose cookbook do you turn to again and again?

The Flavour Bible by Karen Page - it's not technically a cookbook but it shows you the best flavour pairings and tells you what chefs have done with core ingredients.
