What’s the story behind Bang-Rak?
The name is taken from one of the districts of Bangkok. It's where our chef comes from and is known as 'the village of love' because it's a popular place for Thai weddings.

Meeting different people.
What ingredients do you always have in your kitchen cupboard?
Sugar, vinegar, dried chillies, fresh chillies, limes, lemongrass, fish sauce, coconut milk and garlic. The essentials for any Thai dish.
Sweet or savoury?
What's been your most memorable meal?
That's a tough one! The strangest was squirrel pie.
Have you ever had any culinary disasters?
I accidentally added salt to the Pad Thai sauce instead of sugar. Not a good move.
What do you cook to impress friends and family?
Roast guinea fowl, Thai-style.

A nice greasy fry-up. If it's my last meal, the calories won't matter!
