Enjoy sensational seasonal dishes inspired by Finnish nature
Veganism is definitely having a moment. Unless you’ve been living under a rock for the past 12 months, it’s practically impossible to miss the many vegan options popping up in mainstream restaurants and food outlets, and this year’s Veganuary initiative – where people pledge to go animal product-free for a month – saw an unprecedented 150,000 people sign up.
A plant-based lifestyle may sound extreme, or even restrictive, but vegan cuisine is far from bland salads and tofu. Vegan dishes can be exciting, experimental and – yes – full of flavour.
Still need convincing? Why not try Aster’s brand new vegan brunch menu – a two or three-course feast taking place every Sunday with optional unlimited Bloody Marys or Prosecco (both vegan-friendly, of course).
The vegan brunch takes place every Sunday from 12pm – 4pm. Two-courses £25, three-courses £30. Add bottomless bubbles and Bloody Marys for £19.
Executive chef Helena Puolakka has taken inspiration from her Finnish background to create a ‘unique experience which combines both pure ingredients with the radiance of seasonal summer ingredients.’ Expect fresh, playful dishes packed with flavour, such as heritage tomatoes with baby basil and sherry dressing; hearty mushrooms on toast with herb salad; and smoked courgettes loaded with red rice and super seeds. What’s more, the (dairy-free) icing on the cake is that Aster has partnered with Nordic skincare brand Lumene, and anyone who pops in for Sunday brunch will leave with a complimentary goody bag. Top stuff.
